In Šibenik we like to switch letters in the words, thus amina also means anima. Traditionaly, amina is the most important ingredient of something or that special ingredient that gives a touch of soul to it. Roots of the word can also be found in veneto where is again anima or otoman word where it means something authentic and original. Whatever the meaning, for us its an ode to a rich cultural heritage of winemaking and tradition of Sibenik region.
Made from hand picked grapes of Debit, Trbljan and Maraština, all autochthonous varieties of the region. Macerated for a couple of days and fermented on wild yeast in larger oval oak barrel with total production of less than 2500 bottles. Enjoy slowly, some things shoul not be rushed…
